One Seed Instead of Two
A standard coffee cherry contains two flat-sided beans sitting face-to-face. A Peaberry cherry contains just one bean, and because it has the whole interior space to itself, it develops into a round, oval shape rather than the typical flat profile. This happens in roughly 5% or fewer of all cherries on any given tree.
Roasters seek Peaberry because the round shape interacts with heat differently. The even surface area means heat distributes more consistently around the bean, which many roasters find reduces variation in roast development across a batch. The cup profile tends to be more concentrated and distinct compared to flat beans from the same harvest.
